Classic Light and Fluffy Waffles

Well, it's been a while, hasn't it? I know! But here's what happened - I moved into a new apartment a few months ago. One that magically has a dishwasher. Having not had a dishwasher for many years, I thought everything should be given a go in it, to make sure they were actually clean. The mistake, however, was including the Kitchenaid mixer metal attachments. Note to everyone: DO NOT put those in the dishwasher! They will come out with this strange silver film all over them. It's something about aluminum and blah blah. I just assumed they would be stainless steel. WRONG!

Anyway, so the story is this: these attachments have still not been replaced. So the baking being done has been rather limited since that happened a couple months ago. As you can see, this recipe isn't even one that requires baking!

Yes, today I am talking about waffles! I haven't made waffles in some time, mostly because these banana pancakes are super easy and have become something of a tradition on weekends. But this past weekend, I woke up thinking I wanted to do something different. I wanted to do... waffles! However, the waffles I've made in the past have not always lived up to the hype. I love waffles, but my homemade ones have been... well... meh.

I guess it's The Pioneer Woman to the rescue, because these waffles are in fact her recipe, and I can confirm that they are deliciously light and fluffy. I'm pretty sure it has to do with the separating of the eggs and getting some stiff egg white action going on. Also? I had to beat those things by hand. See above re: mixer issues. I would highly recommend using a mixer, my friends. Highly. My arm was not so happy about this whipping by hand situation.

But, yes! If you want a nice, light, fluffy, and sweet waffle recipe, give this a go! I don't think you'll be disappointed.

Classic Light and Fluffy Waffles by freshfromthe.com

The traditional homemade waffle recipe you expect. Light and fluffy and delicious.

Ingredients:
  • 2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar
  • 1 ½ cups milk
  • 2 whole egg yolks
  • 1 stick (1/2 cup) butter, melted
  • 4 whole egg whites
Instructions:
  1. Preheat your waffle iron at its regular setting (mine only has one setting!).
  2. Sift together (or whisk, which is what I did) the flour, baking powder, salt, and sugar in a bowl.
  3. In another bowl, whisk together the milk, egg yolks, and vanilla. Gently stir that into your dry ingredients about halfway, then add in your melted butter. Continue mixing gently until combined.
  4. In another bowl (or use a mixer, which is easier), beat your egg whites until they form stiff peaks. Carefully fold those into your batter until they are just about all the way mixed in.
  5. Scoop out your batter into your waffle iron per your individual waffle iron's instructions. Cook, eat, and enjoy!

Bisquick Waffles

Waffles or pancakes? Pancakes or waffles? If you're a person, and I assume you're not some robot from the future reading this right now, then you probably have a preference.

What's mine? No question.


Waffles.


So if you're like me and would rather have some waffles than pancakes today, an actual pancake celebration day, then read on.

These are waffles that use Bisquick. Yes, yes, not entirely homemade. But I have all of this Bisquick from the 7Up Biscuits, and was also feeling like some waffles, so what are you gonna do? It's obviously a perfect opportunity to combine the two. And also? Super easy.

Bisquick Waffles

2 cups Bisquick baking mix
1 ½ cups water
1⁄3 cup powdered milk (or you can use milk instead of the water and powder)
2 eggs , separated

Mix mix, water, milk powder (or 1.5 cups of milk if using that instead) and egg yolks until well mixed.

In a separate bowl, beat egg whites with clean beaters until stiff. Fold egg whites into the batter.

Pour the batter onto a preheated waffle iron and bake per its instructions.

These can be frozen when cooled, or just refrigerated for a few days if you feel like it. Pop 'em in the microwave (depending on how many, I did mine for about 45 seconds, but they were just refrigerated, not frozen), or if you so desire, you can treat these like some Eggos and stick them in the toaster.

Whip up the egg whites.

Fold in the egg whites. Fluffy.

Set your waffle iron to work and voila!

Mmm. Waffles!

Pumpkin Waffles (of the vegan persuasion)

Here we are again with more pumpkin. I seem to be nigh on obsessed, don't I? I mean, I am, but also? I always seem to have extra from other recipes, thus making me look up more new recipes, so it's just a pumpkin extravaganza up in here!



Confession: I do not remember the last time I used my waffle iron. It's... been a while. It's one of those things that I forget I have nestled in one of my cupboards, you know? A shame, because I quite like waffles. Much more than pancakes. Pancakes can take a hike if I've got the option of waffles. These waffles at Willamette, my alma mater, were almost boat-shaped, so you could pile it up with strawberries and whipped cream. Mmm mmm, those were Sunday mornings.

I digress. These are pumpkin waffles. And they are delish. My photos of them? Not so much, but... oh well. But okay, it turns out, these waffles? They're vegan. What! I didn't set out to make specifically vegan waffles, but I did set out to make some with soy milk rather than regular, and eventually I found the below recipe. I wasn't sure how they'd turn out, lacking the egg ingredient, but I think they turned out decent enough. Perhaps not as fluffy as one has come to expect from waffles, but then, I am not a waffle snob, so I was perfectly content.

Also? You don't even really need to add the butter and syrup. They taste mighty good all on their own!


Pumpkin Waffles

1 cup pumpkin
1/3 cup sugar
1/2 cup soy milk
3/4 to 1 cup flour
1 tsp baking powder
1/4 tsp cloves
1/4 tsp ginger
1/2 tsp nutmeg
1 tsp cinnamon
1/4 tsp salt

Combine together the pumpkin, sugar and milk until smooth. In a separate bowl, combine the flour with all of the spices, then gradually add into the pumpkin mixture until just combined. Cook on waffle iron.

Here we have the pumpkin, sugar and soy milk all mixed together and friendly.

With the dry ingredients all added.

The first two to come off the waffle iron.

You must be careful, though, lest this happen. My waffles split in two! Partially because I forgot to "condition" my waffle iron, and I think also partly because these waffles don't have egg, so don't stick together as well as they would with egg. But you know what? They taste just as good to me!
